The straw fire rose much faster than I expected. The bonito was not slowly grilled; flames wrapped around the surface, creating smoke and colour while the centre stayed deep red. After seeing the process, I understood that katsuo no tataki is as much about speed and fire as it is about freshness.

Which Straw-Grilling Experience Should You Choose?

Tosa Tataki Dojo is the easiest first choice from Kochi city. You hold the bonito near the straw fire and eat the finished slices as a meal. Kuroshio Kobo in Nakatosa and Kuroshio Ichibankan in Kuroshio Town fit a coastal road trip and feel more connected to fishing communities. Susaki's whole-bonito programme goes deeper into handling and preparation, but normally needs firmer booking conditions and more time.

Myojinmaru at Hirome Market

If I wanted the flavour and atmosphere without handling the fire, I would watch the staff at Myojinmaru grill each order inside Hirome Market. The salt version needs little sauce because garlic, onion and smoke already give it structure. The difficult part at popular times is finding a seat, not deciding what to order.

My Kochi Food Route

For a Kochi city day, I would visit Tosa Tataki Dojo toward the Katsurahama side, return for Kochi Castle and finish at Hirome Market with a smaller portion. For a self-drive coast trip, I would choose Kuroshio Kobo or Kuroshio Ichibankan and stay in the area instead of driving a long distance after dinner. Catch availability, weather and group bookings can affect the programme, so I would confirm before leaving.
